I need Pizza! I haven’t left the house in 3 days! I’ve been home with Rubi since I picked her up from the vet on Tuesday, after her surgery. She is recovering well but I have to say, the incision site is pretty large and icky, in fact when the vet tech handed me the leash I thought ‘Holy S#@&, is she OK to come home?”.
She was; she just needed some extra TLC. And I’m always up for that!
Even though I’ve been house-bound, I haven’t been lonely, friends have stopped in to see Rubi and visit with me. My friend Jill came by last eve to catch up and brought a Pizza to share. Now Pizza is my absolute favorite junk food. I am so guilty of over-eating when Pizza is on the menu.
So it’s almost noon, I’ve had my coffee, watched the news, read a little, taken care of my baby Rubi and all the while a little voice in my head kept repeating, ‘there’s Pizza in the fridge’. And I knew it wouldn’t stop until I ate it. All of it.
I know some people like leftover Pizza cold, right from the fridge, not me. I like my pizza bubbling hot with a crisp crust. Popping it in the microwave just gives me hot, soggy pizza. So I’m going to share how I reheat Pizza so it’s as good, or better, than hot out of the box.
Take out your trusty cast iron skillet, or any heavy pan, and place on medium heat. Let it warm up a little, then put your pizza in the pan, and let it heat for a minute or two, then cover the pan for 4-5 minutes or until the cheese it melted. Remove the cover and heat until the crust is crust.
That’s it! Reheating Pizza in a pan melts the cheeses perfectly and more importantly, the crust it crispy. Mangia!
