When Autumn arrives, Sundays at my house are ‘cooking’ days, preparing for the week ahead. (It’s also a Football Day but I’m getting off track). Making multiple meals from one item is economical, easy and healthy. A little preparation and forethought and you’re less likely to grab some (unhealthy & expensive) ‘fast food’ on your lunch break.
Yesterday, I bought a 6 lb. Purdue Roaster which cost about $8.00. The Purdue Roasters are super easy because they come already seasoned in a bag ( I know) that you put in pan and pop in the oven. When it was ready I made sliced chicken sandwiches with Pig Candy (sticky bacon) which my mom and I enjoyed on the patio because it was such a gorgeous Autumn afternoon.
Later in the evening, I removed the legs (my favorite part of the chicken) which I will make into a separate meal. I stripped the rest of the meat of the bones and made chicken salad.
This morning I simmered the carcass in water with carrots, onions, celery, salt and pepper for 3 hours. That’s right, I’ll be making soup.
So much goodness from one little purchase!
Pig Candy
- Bacon, patted dry and cut into 4 inch strips
- Brown Sugar
- Cayenne Pepper
- Salt & Pepper
Place the brown sugar, Cayenne Pepper, Salt and Pepper in a baggie and mix together. Add bacon strips one at a time and mix the bacon up until completely coated. Lat the bacon strips on a rack in a broiler pan (lining the pan with foil will help with clean-up).
Place the bacon under a broiler and cook until brown, watch it carefully. Turn the bacon and finish cooking. Let cool.
Then enjoy on everything: sandwiches, hamburgers, appetizers … I could go on and on … It’s that tasty!
