Prime Rib Sliders, Grilled Yukon Gold Potato Garlic Chips and Twice-Caramelized Onions and kicking back with a cold one … does it get any better than this?
When friends drop by (or I’m dining solo) and I want to cook something quick and yummy I turn to my grill. I (usually) have a few Prime Rib patties in the freezer, which are great for times like this: they thaw quickly and need little seasoning, salt and pepper. Also, I love caramelized onions and as I do a lot of grilling all week-long, usually have some in the fridge.
So without running out to the store I whipped up this meal last evening in less time than it took to write this post.
What you need:
- Ground Prime Rib
- Slider Buns
- Yukon Gold Potatoes
- Vidalia Onions
- Smoked Gouda Cheese
- Extra Virgin Olive Oil
- Sea Salt, Fresh Pepper and Garlic Powder
What to Do:
Wash the potatoes and slice each length-wise into 4 or 5 ‘chips’. Toss in a bowl with EVOO, sea salt, pepper and garlic powder.
Placed the potatoes on a hot griddle, I have one on my grill at all times, and grill until golden brown and crisp on each side.
Slice the onions, toss with EVOO, add a little salt and grill with the potatoes, turning often. Once the onions have started to soften and turn that lovely shade of brown, drizzle a little more EVOO and add a sprinkle or two of the brown sugar and toss to mix. Continue to grill the onions.
By this time they are going to smell incredible! Your neighbors will start to look your way.
Roll the ground Prime Rib into balls and flatten slightly creating a little depression on top of the burgers with your thumb, season with sea salt and fresh ground pepper.
When the potatoes and onions are almost done, I move them off a direct heat source to keep them warm and put the burgers on the grill over indirect heat. I like my burgers medium rare, flipping them over once.
** I use silicone tipped tongs for most of my grilling, I can move and toss things quickly without poking holes in my meat (which will let the juices run out).
Just before the burgers are done I move them over to the griddle, put the Gouda in the depression and cover with a sauce pan lid to melt the cheese. If you want toasted buns, now is the time to put them on the grill.
Once the cheese melts and the buns are toasted, assemble your Sliders, garnish with Bread and Butter pickle chips, grab a cold Lager from the fridge, relax and enjoy!
