I need a quick power dinner before 9-Ball! Monday is 9-Ball night and dinner can be challenging, especially if I leave the office a little late. So tonight it’s an open-faced Chicken Salad sandwich on Toast Points with Tomato & Arugula.
The Chicken Salad:
- Shredded Chicken. A roasted chicken makes the best salad. I picked one up at the market yesterday, but it’s better if you roast your own on the grill.
- Mayo
- Green Onions – sliced
- Craisins
- Chopped Walnuts or, Roasted Sunflower Seeds (optional)
- Himalayan Salt
- Fresh Ground Pepper
- Tumeric (for color and health benefits)
Mix all the ingredients together and let sit overnight. The Craisins will soften and all the flavors will meld together.
The Sandwich:
- Lightly toast small slices of bread (I use the small ends on Italian Bread – what else are you going to do with them?)
- Spread the warm toast with butter and then a layer of mayo
- Layer thinly sliced tomatoes on the toast, add a little fresh pepper.
- Layer Arugula over the tomatoes
- Add a couple of small scoops of Chicken Salad
- Sprinkle with roasted sunflower seeds
It’s fresh, tasty and quick.
