Well, my team lost and I’m not hosting a Super Bowl party this year but all is not lost; there’s still the Commercials and of course, the Food! So, this got me thinking, if I had to pick one appetizer for a Super Bowl Party, a winning dish, what would it be? It didn’t take me long to decide: Cocktail Meatballs!
OK, cocktail meatballs are not new, nor are they particularly sophisticated, but damn their good! And easy and cheap! All you need is three ingredients and a crock pot. My mother loves them and she doesn’t like anything where the main ingredient is Grape Jelly.
So if you’re looking for an appetizer that’s scrumptious, versatile, economical and travels well, Cocktail Meatballs is the dish!
COCKTAIL MEATBALLS
1 9 Oz. Jar Favorite Grape Jelly
I 18 Oz. Bottle Favorite BBQ Sauce
1 32 Oz. Bag Frozen Mini Meatballs *Turn the Crock pot on high and add the grape jelly and BBQ sauce.
Wisk until smooth and all lumps are gone.
Add the frozen meatballs and blend until coated.
Cover the crock pot and cook on high for 20 minutes.
Reduce heat to low and cook for 3 hours.
Stir before serving.Serve the cocktail meatballs hot with toothpicks & mini sandwich rolls to make Sliders.
* Mix two BBQ sauces together for a unique flavor.
* I use Price Chopper Family Style brand meatballs. They are the perfect size, have a firm texture and their flavor doesn’t compete with the sauce.
