Yesterday was one of those perfect days; casual get together with great friends on the patio, sun shining, music playing, fire crackling, good food and drink. Just ‘being’ with friends. No pretense. no fuss, no lists.
Just Being …
Keeping it simple is key to having just as much fun as my friends.
On the Grill:
Grilled Pork Tenderloin cooked the 7-6-5 Method: marinate the pork for one to two hours. Take it out of the fridge at least 30 minutes before grilling. Sear the pork on direct, high heat keeping the cover down, for 7 minutes, turn the tenderloin and grill for 6 minutes (cover down), then turn the heat off and let finish cooking for 5 minutes! Perfectly cooked tenderloin, moist and flavorful with nice sear lines. Serve with warmed Cranberry Apple Chutney.
Roasted New Potatoes: place potatoes in parchment lined foil, drizzle with olive oil, season with sea salt and fresh ground pepper, wrap the foil into a little packet and place on the grill over indirect low to medium heat for 30 to 45 minutes until potatoes are tender. You can add sliced onions before roasting for x-tra flavor. Open the packet and season with fresh herbs. Go ahead and serve them on the table right from the packet, easy!
And of course, a little sweetie as the light fades: Grilled Pound Cake with Nutella & Hazelnut Cream. Slice pound cake right from the fridge into 1 inch slices, grill on each side until nice grill marks form, spread Nutella on half the slices and top with remaining slices; whip Whipping cream flavored with Frangelico Liquor until slightly thickened and drizzle over the Pound Cake/Nutella sandwich. Top with fresh fruit (like a chocolate dipped strawberry, perhaps).
